Mayonnaise is a wonderful addition to a meal, but, shop bought is full of sugar, preservatives and rarely made with olive oil.

Here is my recipe for healthy mayonnaise.

4 organic egg yolks at room temperature
1 tablespoon lemon juice or apple cider vinegar
Salt and pepper
⅔ cup olive oil
Pinch of saffron or turmeric (optional)

1.Put egg yolks into blender or bowl and whisk/blend until smooth.
2. Add lemon juice or vinegar and spices and blend until mixed.
3. SLOWLY add oil while blending or whisking at low speed.
4. Store in fridge up to 1 week.
